The only thing I have in my files which could potentially be cooked over a fire or in a Dutch oven is chili.
Veggie Chili
1 tablespoon olive oil
1/2 medium onion, chopped
2 bay leaves
1 teaspoon ground cumin
2 tablespoons dried oregano
1 tablespoon salt
2 stalks celery, chopped
2 green bell peppers, chopped
2 jalapeno peppers, chopped
3 cloves garlic, chopped
2 (4 ounce) cans chopped green chile peppers, drained
2 (12 ounce) packages vegetarian burger crumbles
3 (28 ounce) cans whole peeled tomatoes, crushed
1/4 cup chili powder
1 tablespoon ground black pepper
1 (15 ounce) can kidney beans, drained
1 (15 ounce) can garbanzo beans, drained
1 (15 ounce) can black beans
1 (15 ounce) can whole kernel corn
Chili
1 T Olive Oil
1 1/2 C Chopped Onion
3 Garlic Cloves, Minced
3 C Veggie Broth, Divided
1 C Ketchup
2 T Sugar
2 T Chili Powder
2 T Worcestershire Sauce
2 (14.5 oz) Cans Diced Tomatoes, Undrained
1 (15.5 oz) Can Chickpeas (Garbanzo Beans), Rinsed & Drained
1 (15 oz) Can Black Beans, Rinsed & Drained
1 (15 oz) Can Kidney Beans, Rinsed & Drained
1 (16 oz) Can Cannellini Beans or other White Beans, Rinsed & Drained
1 (?) Can Baked Beans
1 (6 oz) Can Tomato Paste
1/2 C (2 oz) Reduced Fat Shredded Cheddar Cheese
3/4 C Chopped Carrots
3/4 C Chopped Celery
1 C Chopped Green Pepper
1 C Chopped Red Pepper
(And other veggies)
Preparations:
Heat oil in large Dutch oven over medium/high heat. Add onion and garlic and other veggies; saute' 3 minutes or until tender. Add 2 C veggie broth and ketchup and next 9 ingredients (through baked beans), stirring to combine.
Combine remaining C of veggie broth and tomato paste in a bowl, stirring with a whisk until blended. Stir tomato paste mixture into bean mixture. Bring to a boil; reduce heat, and simmer 5 minutes or until thoroughly heated. Top with cheese if desired.
