Does anyone have any good recipes? I'm particularly interested in slow cooker/dutch oven recipes and things that can be done over/in/with a fire (like a fire pit not a grill) or a wood stove. I've tried looking online but everything I'm coming across is dandy fancy stuff, plus I would like to hear what ideas you all have. Thanks for any input.

The only thing I have in my files which could potentially be cooked over a fire or in a Dutch oven is chili.

Veggie Chili
1 tablespoon olive oil
1/2 medium onion, chopped
2 bay leaves
1 teaspoon ground cumin
2 tablespoons dried oregano
1 tablespoon salt
2 stalks celery, chopped
2 green bell peppers, chopped
2 jalapeno peppers, chopped
3 cloves garlic, chopped
2 (4 ounce) cans chopped green chile peppers, drained
2 (12 ounce) packages vegetarian burger crumbles
3 (28 ounce) cans whole peeled tomatoes, crushed
1/4 cup chili powder
1 tablespoon ground black pepper
1 (15 ounce) can kidney beans, drained
1 (15 ounce) can garbanzo beans, drained
1 (15 ounce) can black beans
1 (15 ounce) can whole kernel corn

Chili
1 T Olive Oil
1 1/2 C Chopped Onion
3 Garlic Cloves, Minced
3 C Veggie Broth, Divided
1 C Ketchup
2 T Sugar
2 T Chili Powder
2 T Worcestershire Sauce
2 (14.5 oz) Cans Diced Tomatoes, Undrained
1 (15.5 oz) Can Chickpeas (Garbanzo Beans), Rinsed & Drained
1 (15 oz) Can Black Beans, Rinsed & Drained
1 (15 oz) Can Kidney Beans, Rinsed & Drained
1 (16 oz) Can Cannellini Beans or other White Beans, Rinsed & Drained
1 (?) Can Baked Beans
1 (6 oz) Can Tomato Paste
1/2 C (2 oz) Reduced Fat Shredded Cheddar Cheese
3/4 C Chopped Carrots
3/4 C Chopped Celery
1 C Chopped Green Pepper
1 C Chopped Red Pepper
(And other veggies)

Preparations:

Heat oil in large Dutch oven over medium/high heat. Add onion and garlic and other veggies; saute' 3 minutes or until tender. Add 2 C veggie broth and ketchup and next 9 ingredients (through baked beans), stirring to combine.

Combine remaining C of veggie broth and tomato paste in a bowl, stirring with a whisk until blended. Stir tomato paste mixture into bean mixture. Bring to a boil; reduce heat, and simmer 5 minutes or until thoroughly heated. Top with cheese if desired.

I'm not one for chili (too many veggies, beans and crap) but my vegetarian friend loves the veggie friendly chili.

Well it's not to hard to add meat to the chili. But I grew up on caned chili, which was just the chili(meat) sauce and beans so having something other that caned chili is a plus. So thank you again, I can't wait to try it.
