You have to be gentle with the roots. They have little microscopic hairs on them to soak up water that can easily be knocked off. Some plants go into shock if they're treated too roughly, too -- some even get carsick, and you have to let them adjust for a few days in a dim area before they're better. (Think if you were born to live in the solid ground and to expect a predictable day and night, and you're getting bumped and vibrated and jostled around like a constant severe earthquake or like you were uprooted, and the sun is changing places in the sky and the wind's battering you...it would stress you out.) Others like mint (which grows with runners) can be safely ripped into separate plants and repotted, and they're hardy enough to usually do fine. But then, mint will also root from cuttings as well...and smother the plants around it...
